Cheesecake-Stuffed Chocolate Chip Cookies

I saw a post on Facebook several months ago for Cheesecake-Stuffed Chocolate Chip Cookies, so I finally decided to try and make some.

I think it's my new favorite cookie!

I just loved the cheesecake center - it makes the cookie all the more decadent!

I eat the cookies chilled, but you can also warm them up in the microwave for a few seconds.  Delish!

Cheesecake-Stuffed Chocolate Chip Cookies

Ingredients:
  • 8 oz cream cheese, softened
  • 1/2 c powdered sugar
  • 1 c butter, softened
  • 1 c brown sugar
  • 1/4 c sugar
  • 2 eggs
  • 2 t vanilla
  • 1 t baking soda
  • 1 t kosher salt
  • 2 1/2 c flour
  • 2 c chocolate chips
Directions:
  • Create the cheesecake filling by mixing the cream cheese and powdered sugar until smooth.  Refrigerate while making the cookie dough.  
  • Mix butter and sugars until creamy.  
  • Mix in eggs, vanilla, and baking soda.  
  • Add in flour until just combined.
  • Mix in chocolate chips. 
  • Scoop 2 tablespoonfuls of dough, roll into balls, and flatten.
  • Scoop 2 tablespoonfuls of the cream cheese mixture and place on a circle of dough.  Place another circle of dough on top the cream cheese mixture, and form one giant ball around the cream cheese.  
  • Place on parchment-lined cookie sheet and bake for 375 degrees Fahrenheit for 10 minutes.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack.
