Carrot Cake Sheet Cake Recipe

We bought a bunch of carrots from our local warehouse club store, which meant we ended up with lots of leftovers that I didn't want to go to waste.  So I made Carrot Cake Sheet Cake!



I used store-bought frosting since I didn't have the ingredients to make my own, but the cake still turned out moist and delish!

Carrot Cake Sheet Cake

Ingredients
  • 2 c flour
  • 2 c sugar
  • 2 t baking powder
  • 1 t cinnamon
  • ½ t baking soda
  • 3 c shredded carrots
  • 4 eggs
  • ¾ c vegetable oil
  • 1 t vanilla extract
  • 1 container store-bought cream cheese frosting
  • 1 c chopped walnuts
Directions
  • Preheat oven to 350 degrees Fahrenheit. 
  • In a mixing bowl, mix together flour, sugar, baking powder, cinnamon, and baking soda.
  • In a separate bowl, combine oil, eggs, vanilla and shredded carrots.
  • Stir in dry ingredients to carrot mixture.  
  • Pour batter into parchment-lined 9x13 pan and bake for 30-35 minutes. 
  • Spread cream cheese frosting on completely cooled cake.
  • Sprinkle walnuts over frosting.
