Salted Caramel + Chocolate Pudding Cookies

I decided to clean out the pantry one day, and I ended up making Salted Caramel + Chocolate Pudding Cookies!




I used caramels I bought on a trip to make a typical pudding cookie a little more special.  I only had regular pudding on hand, not instant, but you could use either type.  The cookies turned out to be so good!

Salted Caramel + Chocolate Pudding Cookies

Ingredients:
  • 1/2 c butter, softened
  • 3/4 c brown sugar, packed
  • 1 t vanilla extract
  • 1 egg
  • 1 5 oz box chocolate pudding mix
  • 1/2 t baking soda
  • 1/4 t salt
  • 1 1/4 c four
  • 1 c chocolate chips
  • 1 c salted caramel pieces
Instructions:
  • Cream butter and brown sugar in a medium bowl.
  • Mix in egg and vanilla.  
  • Stir in pudding mix, baking soda, and salt.
  • Mix in flour.
  • Stir in chocolate chips and salted caramel pieces.
  • Chill dough for at least an hour. 
  • Preheat oven to 350°F. 
  • Roll dough into balls and bake on parchment-lined baking sheet for 9-11 minutes.
