Taco Rice

At a recent media event, everyone kept talking about Taco Rice.  I constantly hear people talk about this popular dish, and although I had forgotten I tried Taco Rice in Tokyo last year, I haven't had it anywhere on Oahu until the media event at Joy Cup Noodles Mean.

Taco Rice is exactly what it sounds like.  It originated in Okinawa and became a staple dish of military families. 

It sounded easy enough to make at home!

All I did was brown a pound of ground beef, drain, then cook it with onions, water, and a packet of taco seasoning mix.
I then placed the seasoned beef on a bed of rice, and garnished with lettuce, tomatoes, cheese, green onions, and sour cream.

It was definitely a hearty and comforting meal.  Although I missed the crunch of a taco shell or tortilla chips, the family loved it, and it's definitely a quick and easy meal to make.
