Strawberry Bread

I recently made Strawberry Bread, and I already can't wait to make it again.  It was so quick, and so yummy!



It's the perfect afterschool snack, and would be great for breakfast or dessert (with ice cream!) too!

Strawberry Bread

Ingredients:
  • 1 1/2 c flour
  • 2 t cinnamon
  • 1/2 t baking soda
  • 2/3 c sugar
  • 3 T coconut oil, melted and cooled to room temp
  • 1/2 c + 2 T plain yogurt  
  • 2 large eggs
  • 1 t pure vanilla extract
  • 1 1/2 c diced strawberries
  • strawberry slices to garnish (optional)
  • 1/2 c powdered sugar
  • 1/2 t pure vanilla extract
  • 1 T milk
Directions:
  • Preheat the oven to 350 degrees Fahrenheit.
  • In a medium bowl, combine the flour, cinnamon, salt, and baking soda. 
  • In a separate bowl, mix together the sugar, coconut oil, yogurt, eggs, and vanilla.
  • Combine the wet ingredients and dry ingredients.  Do not over-mix. 
  • Fold in diced strawberries.
  • Pour mixture into prepared 8x4 loaf pan.  
  • Place sliced strawberries on top of batter (optional).
  • Bake for 45 to 55 minutes.
  • Make the vanilla glaze by whisking 1/2 c powdered sugar, 1/2 t vanilla, 1 T milk. 
  • Drizzle over baked bread.
