S'mores Cookies

While cleaning out our pantry, I found a bag of mini marshmallows, as well as several boxes of graham crackers.  Of course the first thing that pops into mind is S'mores, so I made S'mores Cookies!


I loved the taste of the graham crackers mixed into the cookie dough - all that S'mores yumminess wrapped up in a cookie.  If you love S'mores, this recipe is a must!


S'mores Cookies

Ingredients:
  • ½ c sugar
  • ¼ c brown sugar, packed
  • ½ c butter, softened
  • 1 egg
  • 1 t vanilla
  • 1⅓ c flour
  • ¾ c graham cracker crumbs
  • 1 t baking powder
  • ½ t salt
  • 1 c chocolate chips 
  • 1 c mini marshmallows

Directions:
  • Preheat oven to 350 degrees Fahrenheit.
  • In a medium bowl, mix together the butter, brown sugar, and sugar until light and fluffy.
  • Stir in egg and vanilla.  
  • In a separate bowl, combine the graham cracker crumbs, flour, baking powder, and salt. 
  • Slowly add the dry ingredients into the wet ingredients and combine.
  • Fold in the chocolate chips and marshmallows.
  • Roll heaping tablespoons of the dough into balls.
  • Place on cookie sheet and bake for 10-12 minutes.
