Stage Restaurant Five Course Tasting Menu

I was fortunate to have been invited to a Five Course Tasting Menu experience at Stage Restaurant, which recently underwent a transformation with a refreshed look and menu.

The menu showcased world-inspired dishes and local comfort classics created by Executive Chefs Ron de Guzman and Pastry Chef Cainan Sabey.
Housemade Bread
Amuse Bouche
The Five Course Tasting Menu is $80, with Beverage Pairings at an additional $40.
"Caeasar Salad"
The "Caesar Salad" consisted of Big Island Heart of Palm, Endive, Bacon Powder, and Crispy Parmesan, which were all brought together with a delicious Anchovy Vinaigrette.
Chawanmushi
The Chawanmushi was my favorite dish of the meal.  Shiitake mushrooms, corn, and smoked trout roe gave the custard nice texture, and the scallion puree and truffle-soy enhanced the overall flavor of the dish.
Twice Cooked Braised Pork Belly
The Twice Cooked Braised Pork Belly was topped with pickled onions and an ume puree, giving the pork a nice, contrasting complexity. 

Mango Yuzu Sorbet
Beef Wellington
Tender meat was enveloped in a crisp puff pastry, and was accompanied by a truffle-mushroom duxelle for the fourth course of Beef Wellington. 
Lemongrass Tart
The Lemongrass Tart was the Dessert du Jour. It was topped with Ho Farms tomatoes, and was served with a refreshing lemongrass olive oil sorbet.  It was a pleasant mix of sweet, tart, and savory.

Truffles
I really enjoyed the entire tasting menu.  The Chawanmushi was a favorite of our table, and so was the Pork Belly.

I also love Stage's new look - a mix of modern elegance with casual comfort.


I can't wait to return to try out more of Chef Ron's and Chef Cainan's creations!
