Visit Vermont: Prohibition Pig Restaurant

My favorite restaurant during our entire two week trip on the East Coast was Prohibition Pig, located in Waterbury, Vermont.  There is a separate bar, but we dined at the restaurant.

Sliced Beef Brisket

I ordered the GLT - house guanciale (house cured bacon from the pig's jowl), fried green tomato, baby arugula, roasted garlic aioli.  It was absolutely amazing - best bacon I ever tasted.

My husband ordered the Sliced Beef Brisket, and he also loved his sandwich (he agrees it was the best restaurant we ate at as well).  

The Duck Fat fries were addicting. Our server warned us that the kids would get plenty of regular fries with their meals so we could just eat their leftovers, but I'm so glad we ordered the Duck Fat fries. We ate the entire serving!

And our server was right - the kids received lots of fries with their meals!
