Potato Pancakes

Potato Pancakes can make a hearty meal simply by mixing in some protein (bacon, chicken) and /or veggies (corn, shredded carrots).

This recipe is very versatile, and it's a great way to used up leftover mashed potatoes!


Potato Pancakes

Ingredients:
  • 4 medium-sized potatoes, peeled, boiled, and mashed
  • 1 cup shredded, cooked chicken
  • 2 eggs
  • 1/2 c panko
  • salt
  • pepper 
  • oil for frying 
  • chopped scallions & sour cream for garnish (optional)
Directions:
  • Combine mashed potatoes, chicken, eggs, panko, salt, and pepper in a medium bowl.  
  • Form patties and pan-fry patties in 2 T oil, approximately 3-5 minutes each side, or until golden brown.
  • Top with chopped scallions and sour cream!
