Blueberry Crumble Bars Recipe

I recently made these Blueberry Crumble Bars using this recipe from Love Bake Good Cakes.


They were so yummy!  Not only did I eat them for dessert, but I even ate them for breakfast!

Blueberry Crumble Bars (recipe credit Love Bakes Good Cakes)

Ingredients:
  • ½ c sugar
  • ½ c brown sugar
  • 1 t. baking powder
  • 3 c flour
  • 1 c butter
  • 1 egg
  • ½ t vanilla
  • 4 c fresh blueberries (I used 2 c)
  • ½ c sugar
  • 3 t cornstarch
Directions:
  • Preheat oven to 375°F. 
  • Combine 1/2 c sugar, brown sugar, baking powder, and flour in a medium bowl.  
  • Cut in butter.
  • Stir in egg and vanilla until mixture is crumbly. 
  • Pat half of the mixture into the bottom of a parchment-lined 9x13 pan.
  • In another medium bowl, combine the blueberries, 1/2 c sugar, and cornstarch. 
  • Sprinkle the blueberry mixture over crust.  
  • Sprinkle remaining crumb mixture on top of blueberries.  
  • Bake for 45 minutes or until the top is lightly browned. 
  • Cool completely before cutting into squares.
