Lime Jello Cake


For my husband's 40th birthday, he requested a lime jello cake - a cake he enjoyed eating as a child.  The recipe credits the Honolulu UE Club.  Our daughter had the best time baking the special cake for her father.

She started with mixing together:  1 box Duncan Hines yellow cake mix, 1 box lime jello, 3/4 cup oil, 4 eggs, and 1 cup water.  She then mixed on high for about 3 minutes.  She baked the cake in a greased 9x13 pan at 350 degrees for 30 minutes.  Baking time will depend on your oven.  We overbaked our cake. 

Let your cake cool for about 15 minutes before spreading on the glaze.  For the glaze, you need to mix 1 cup powdered sugar with the juice of 1 lemon.  Using a fork, poke holes in the cake to let the glaze sink in.
