Baked Dijon Salmon

I found another easy recipe to satisfy my middle son's craving for fish - Baked Dijon Salmon, based on this recipe from Allrecipes.com.


Most likely you'll have all the ingredients on hand.  I made some substitutions, but it still turned out delicious!

Baked Dijon Salmon (recipe adapted from Allrecipes)

Ingredients
  • 1/4 c butter, melted
  • 3 T Dijon mustard
  • 1 1/2 T honey
  • 1/4 c panko
  • 4 t parsley
  • 4 4 oz salmon fillets
Directions
  • Preheat oven to 400 degrees F 
  • In a small bowl, mix together the butter, mustard and honey.  Spread the mixture on each salmon fillet.  
  • In a separate small bowl, mix together the bread crumbs and parsley, and sprinkle atop the salmon fillets. 
  • Bake salmon 12 to 15 minutes.
