Cheesy Hasselbacks

When I saw the recipe for Cheesy Hasselbacks in the Good Housekeeping magazine, I immediately wanted to give it a try.

They're so easy to make, and they're stuffed and topped with all kinds of yummy ingredients!

Cheesy Hasselbacks (recipe slightly adapted from Good Housekeeping):

Ingredients:
  • 6 medium russet potatoes
  • 3 T olive oil, divided
  • sea salt
  • cheddar (I used shredded cheddar cheese)
  • sour cream
  • green onions, chopped
  • crumbled bacon
Directions
  • Thinly slice russet potatoes (without cutting all the way through).
  • Brush potatoes with 1 1/2 T olive oil.
  • Bake at bake at 425 degrees F for 30 minutes.
  • Brush the potatoes with the remaining 1 1/2 T olive oil.  
  • Sprinkle with sea salt.
  • Bake for approximately 30 more minutes.
  • Stuff cheddar into each slice.  
  • Garnish with sour cream, green onions, and bacon.
