Summer Treats

Summer is here and it's hot!  Popsicles are a great summer treat for you and your kids. It's so easy to make, even your kids can do it. My daughter and I decided to make some with ingredients we already had at home. My daughter calls it Orange Delight Pops.

You will need a popsicle mold or paper/plastic cups and popsicle sticks.

Ingredients:
• 3/4 cup thawed orange juice concentrate
• 1 cup milk
• 1 cup water
• 1/4 cup sugar (I replaced it with Stevia and used less sugar)
• 1 tsp. vanilla extract

Directions:
Mix all ingredients together until well blended. Pour into popsicle mold. Freeze for 4-6 hours or until frozen. When ready to eat, run the popsicle mold under warm water to loosen and enjoy! Super easy and fun for the kids to make and enjoy.

I also made coffee popsicles for myself with left over coffee I had from the morning. Just cool your left over coffee (I put my coffee in the refrigerator for a couple hours to make it cold) and pour in mold or in my case, I used a plastic cup. I added a chopstick (used as a popsicle stick) about an hour after I put it in the freezer. Freeze and serve. Another delicious and easy treat.
