Easy Pineapple Upside Down Cake Recipe


When I'm pressed for time, I love to use recipes that incorporate cake mixes!  The result is delicious desserts in easy steps.  One of my favorites is one for a pineapple upside down cake.  You can also follow the same steps in a muffin tin to make cupcake portions that are super cute.
 
First mix together: 1 box yellow cake mix, 1 box instant vanilla pudding, 4 eggs, 3/4 cup water, and 3/4 cup oil.  Beat the batter on medium speed for 4 minutes.
 
Next, melt one block of butter and pour into a 9x13 pan.  Sprinkle 1/2 cup of brown sugar on top of butter.  Drain one large can of crushed pineapple.  Lay on top of brown sugar.  Pour batter and bake at 350 degrees for 35 minutes or until the cake is done.  Let the cake cool and then invert, cut, and enjoy!
