Peanut Butter Cheesecake Bars

Chocolate and peanut butter is one of my favorite combinations, so I knew I had to try this Chocolate and Peanut Butter Cheesecake Bars recipe from Brown Eyed Baker.

They were sooooo good - chocolaty, peanut buttery, and so rich!  YUM!


Peanut Butter Cheesecake Bars (recipe adapted from Brown Eyed Baker):

Ingredients:

Crust:
  • 2 c graham cracker crumbs
  • 2 T sugar sugar
  • ½ cup butter, melted
Cheesecake:
  • 16 oz cream cheese
  • 1 c sugar
  • ½ c creamy peanut butter
  • 3 T flour
  • 4 eggs
  • ½ c milk (I used 2%)
  • 1 t vanilla extract
Chocolate Glaze:
  • 1 c chocolate chips
  • 1½ t flavorless coconut oil

Directions:
  • Preheat oven to 350 degrees F. 
  • Combine the graham cracker crumbs and sugar.
  • Stir in the melted butter and combine until crumbs are evenly moistened.  
  • Press the crumbs onto bottom of prepared 9x13 inch backing pan.   
  • Bake for 8 to 10 minutes.  Set aside.
  • While crust is cooling, mix the cream cheese, sugar, peanut butter, and flour in a medium bowl until creamy.
  • Add eggs one at a time, mixing well after each egg.
  • Add milk and vanilla.  Stir until combined.  
  • Pour cheesecake batter over crust and bake for approximately 40 minutes.  Cool in pan on wire rack.
  • In a small bowl, microwave the chocolate chips and coconut oil on 50% power for 1 minute.  Stir until smooth (if needed, microwave for another 30 seconds on 50% power).
  • Pour melted chocolate on cheesecake and spread evenly.
  • Refrigerate for at least one hour before cutting into squares.
