Lemonies

Mmmm, lemon.  One of my favorite flavors.  I've always steered clear of making lemony treats like lemon bars for fear of a difficult recipe, but then I happened on Bakerella's recipe and thought, hey I could do this!  And so can you.  Here's how.    



Using a whisk, you will need to mix together 1 c flour, 1 c sugar, 1/4 tsp salt, 1/4 tsp baking powder and 1T lemon zest.  


My kids always like to help so I find easy tasks for them.  My son, the lemon juicer.


Next, you will need to add the melted (and cooled) 3/4 c butter, 2 eggs, 3 T lemon juice, and 1 tsp vanilla.


Mix it well and pour into a greased 8 inch square pan.  Bake at 350 degrees for 25 minutes or until toothpick comes out clean.

This recipe has an icing!  Yes!  Have your child sift 1 1/2 c powdered sugar.  


Then add 2 T lemon juice and 1 tsp lemon zest.  


Once the lemonies are cool, pour the icing on and let it set.  I really liked this icing.  I'm thinking it'd be great on cookies, cakes and cupcakes too!
