Visit Portland: Oregon Zoo

Our family loves to visit zoos whenever we travel, so we knew a visit to Oregon Zoo while in Portland was a must.

Spread out over 64 acres, the Oregon Zoo, which celebrated 125 years this past November, is currently going through some big changes (click here for more information on the "new zoo") in an effort to provide better futures for the animals while engaging and educating visitors.

Although there was some construction going on and some areas that were closed, it did not stop our family from having a wonderful time.    

Highlights of Our Hosted Visit
The Oregon Zoo is home to hundreds of animals, and we saw everything from tiny insects and slithering reptiles, to beautiful birds and enormous mammals.

Grazing giraffes, slumbering hippos, and a polar bear just "chilling" out were just a few of our favorites.

We also thought it was neat to see the fierce lion, the HUGE teeth on the naked mole rat, and the majestic bald eagles.

There were many, many more interesting exhibits, and there were also many educational displays that my kids loved to interact with.

In addition to the educational displays, there are numerous other fun things for kids to do.
 
There's a petting zoo, a large sand box full of toys for kids to play with, several animal statues for fun photo ops, a blowhole which elicited numerous shrieks from kids (including my own) as water sprayed into the air, and so much more (there is also a Zoo Train, which I know my kids would've LOVED, but it's closed until later this year).

Dining
Outside food and drink may be brought into the zoo, and there are several dining facilities on the grounds, including the Cascade Grill, where we had lunch.

The prices were reasonable and the food was delicious and satisfying.

Our Experience Visiting with a Special-Needs Child
My oldest son has an Autism Spectrum Disorder (ASD), and although I know kids on the spectrum all behave and react differently in various environments, I always try to share our personal experience when visiting attractions.

Upon arrival we immediately made sure my son got his own zoo map since he is obsessed with maps.  He really enjoyed walking around the grounds of the Oregon Zoo, and especially loved when he'd see tunnels or caves to crawl or walk through.

Although there was no zebra (it had recently passed away), which is his favorite animal, he was happy to see the elephants, and he really enjoyed watching the penguins in the Penguinarium.

He did not have too many meltdowns, although there were times he did get extremely anxious about which direction we were going next.  Fortunately there were many benches around the zoo to sit to rest or take a snack break, and there were many indoor areas we could have sneaked away to for rainy weather (my son has sensory issues with rain).  There's also a nice big, grassy picnic area if kids need to release some energy and run around.
 
For those on a GFCF diet, as mentioned above you are welcome to bring your own food and drink.

Final Thoughts
Our family really enjoyed the Oregon Zoo and all it had to offer. 

We spent about three hours the zoo, and we saw so many beautiful and unusual creatures, and learned so much at the same time.

I can't wait to see what the "new zoo" will look like when the transformation is complete.

Brookie Bites Recipe

I love making desserts that combine more than one of my favorite treats, and these Brookie Bites combine chocolate chip cookies and brownies into one delectable dessert!

They are quite easy to make, especially if you use prepackaged mixes.  On this particular occasion I used a brownie mix and my favorite chocolate chip cookie recipe.
Brookie Bites
Ingredients:
 
Brownie:
  • 1 box of your favorite brownie mix plus required ingredients. (I used Ghirardelli Triple Chocolate Mix, which required 1 egg, 1/3 c water, 1/3 c oil).
Cookie:
  • 1 c butter, softened
  • 1/2 c  sugar
  • 1/2 c firmly packed brown sugar
  • 1 large egg
  • 1 t vanilla extract
  • 2 c flour
  • 1/2 t baking soda
  • 1/8 t salt
  • 2 c chocolate chips
Directions:
  • Preheat oven to 350 degrees.
  • Spray a mini-muffin tin with cooking spray or use mini-muffin liners.
  • Prepare brownie mix as instructed on box.
  • Scoop approximately 2 teaspoons of brownie mixture into a mini-muffin tin.
  • In a medium bowl combine margarine and sugars until smooth.
  • Add in egg and vanilla and mix until well-combined.
  • In a separate medium bowl combine flour, baking soda, and salt.
  • Add flour mixture slowly into sugar mixture and mix well.
  • Fold in chocolate chips.
  • Roll dough into balls (approximately 2 teaspoons worth of dough in each ball).
  • Place dough balls into brownie mixture.
  • Bake for 20-22 minutes.
  • Makes approximately 48 brookie bites.

Visit Portland: Salt & Straw

Whenever our family travels, we always make sure to indulge at a local ice cream shop. During our recent trip Portland, we stopped at Salt & Straw - twice! The ice cream was that good!

Salt & Straw's handmade ice cream is made with all-natural dairy and local ingredients, as well as some imported ingredients from handpicked farms and producers worldwide.

The result - ice cream so delicious (they use 17% butterfat, for a nice, rich and creamy base) that people from around the world visit to get a taste of their ice cream, sometimes even waiting in very long lines!

The first time we went was on a Friday evening around 6pm. There was no line and we walked right in. The second time we went on a Monday night at about 8pm, and the line was about 30 people deep! We were not about to let a long line discourage us from indulging in some delicious ice cream.

On our first visit I had the Salted Caramel Cupcake - a "Blast from the Past" flavor that one of the employees said was the most popular from the "Blast from the Past" list.  It was a bit on the sweeter side because of the cupcake, but it was still very delicious.  My husband chose the Double Bock Bacon Ale, which he enjoyed, but I didn't really care for it since I could taste the beer.  My kids loved the Chocolate with Gooey Brownies (I gave it a taste and it was indeed very yummy!).

On the second visit, my kids got the Chocolate with Gooey Brownies again, and my husband got the Salted Caramel Cupcake.  I got the Sea Salt Ice Cream with Caramel Ribbon, which I LOVED!  I'm actually not a very big caramel fan, but after reading about the flavor, and overhearing people in line talk about the flavor, I had to try it.

It was such a magnificent combination of sweet and salty, and it is now my favorite ice cream.  

There are many other different flavors that Salt & Straw offers, but I know I'd just get this flavor again and again.

Don't be discouraged if you see a long line.

The ice cream is totally worth the wait.

Shiro's Saimin Haven - Aiea

On a cold, rainy day, there's nothing I'd rather eat more than a nice big bowl of saimin, so that's exactly what I ate on a recent rainy day when our family went to  Shiro's Saimin Haven in Aiea.

I had the Wun Tun Min, which totally hit the spot, along with the French Fries and Gravy.

Although every time we've been to Shiro's we notice that the food never comes out at the same time (e.g. first the saimin, 10 minutes later the fries, another 5 minutes later a kids meal, etc.), the service is always friendly and the prices are very reasonable.

We love going to Shiro's - rain or shine!

Two Scoops Ice Cream Parlor

I love going to ice cream shops, and we recently went to Two Scoops Ice Cream Parlor.

Although there were only a small number of flavors compared to most other ice cream shops on Oahu, and the prices were on the high side, the service was friendly, and the ice cream was very good (the ice cream they serve is Dave's Ice Cream).

The ice cream definitely satisfied our sweet cravings on a hot and sunny day!

Taco Bell's New Breakfast Menu

The hubby received an invitation to try Taco Bell's new breakfast menu, so yesterday morning he drove to the nearest Taco Bell to pick up breakfast for us.  According to the Taco Bell website, the breakfast menu is debuting on March 27, but I guess select locations are rolling it out earlier.  

Here's what he picked up:

Hula Shake

In search of something sweet and cool one Saturday afternoon, we found ourselves at Hula Shake in Kapolei.

Hula Shake's serves fruit teas, smoothies, and milk teas, but we opted for the Snow Ice!
Chocolate Snow Ice with Egg Pudding, Original Mini Mochi, Chocolate Mini Mochi, and Sprinkles

Strawberry Snow Ice with Lychee Popping Boba, Original Mini Mochi, and Strawberry Jelly

Both servings were small servings, which allowed for 3 toppings each.

I normally don't care for all kinds of toppings on my shave ice/snow ice, but I really liked the mochi and popping boba.

Service was really great.  When we weren't sure about the toppings, the woman behind the counter made suggestions on what would go well with each flavor.

We will definitely be back soon to try new flavors and toppings!

Muppets Most Wanted Review

Muppets Most Wanted (Rated PG) is now in theaters, and our family was fortunate to receive tickets to an advance screening over the weekend.
 
About the movie:
Disney’s “Muppets Most Wanted” takes the entire Muppets gang on a global tour, selling out grand theaters in some of Europe’s most exciting destinations, including Berlin, Madrid and London. But mayhem follows the Muppets overseas, as they find themselves unwittingly entangled in an international crime caper headed by Constantine—the World’s Number One Criminal and a dead ringer for Kermit—and his dastardly sidekick Dominic, aka Number Two, portrayed by Ricky Gervais. The film stars Tina Fey as Nadya, a feisty prison guard, and Ty Burrell as Interpol agent Jean Pierre Napoleon.

Muppets Most Wanted picks up right where The Muppets movie left off, and the Muppets gang immediately poke fun at themselves as they realize they are in a sequel, and Kermit sings "the sequel's never quite as good," in the aptly name song "We're Doing a Sequel."

Soon after they find themselves touring the world with Dominic Badguy (pronounced "Badgee"), who really is a bad guy (unbeknownst to the Muppets), as he persuades the Muppets to go on a tour only to use them in a criminal plot that he and Constantine, the evil frog, have been planning.

Kermit soon finds himself being mistaken for Constantine and ends up in the Siberian gulag from which Constantine had escaped, and Constantine pretends to be Kermit.

Despite his very funny voice and odd mannerisms, it takes a while before anyone realizes "Kermit" is not really Kermit, and the Muppets find a way to get Kermit back and reunite the gang to stop Constantine and Dominic.

Although Muppets Most Wanted was a fun movie for the entire family, I actually thought it appealed more to the grownups who could understand the adult humor and pop culture references.

However, my kids did enjoy watching all of the Muppets and their silly antics, and the musical numbers were especially fun.

I thought Ricky Gervais, Tina Fey, and Ty Burrell were great in their roles.  I also liked the many celebrity cameos, and it was nostalgic to see bits of The Muppet Show, especially when the Muppets performed the intro on stage and Constantine watched old footage to practice mimicking Kermit's voice. 

So was Kermit right when he sung about sequels not being quite as good?

In this case, I did think he was right, but I still thought Muppets Most Wanted was an entertaining movie, and our entire family enjoyed watching it.

Kapolei Regional Park Playground

My kids love going to playgrounds, but most playgrounds on Oahu have the same equipment.  Not that my kids mind, but when I found out about the cool equipment at Kapolei Regional Park, we knew we had to make a visit.
There are no slides or swings at this park, but my kids still had a blast.

They climbed, spun, and climbed some more.

It was a very HOT day, and although there are a few benches near the playground, there is absolutely no shade.  It would've been nice if there were some large trees nearby to sit under, but even with an umbrella it was very hot, so we only stayed at the park for an hour.

Still, it was a very fun park, and next time we'll go later in the evening.

La Tour Cafe

I've been wanting to try La Tour Café for a while now, and finally had a chance to when I, along with my youngest son, met Hawaii Mom Blog contributor Nat there for lunch recently.

I thought the Panini was really good (my son loved it too).  I thought the pizza was just "okay," but my son really liked it.

Of course, no visit to La Tour Café would be complete without dessert.

They're known for their macarons, but I ended up getting the Chocolate Ooze Cake.  Nat and I ate it "as is" without it being heated (therefore no chocolate oozing out), but it was still good. 

I'm glad I finally got to try La Tour Café, and next time I'll be sure to ask for the Chocolate Ooze cake to be heated!

Yajima-Ya Food Truck

Yajima-Ya is a stationary lunch truck that serves delicious Japanese fare in a gravel parking lot.  The food is made to order and it's good.  They offer several varieties of hot noodles, cold noodles, plates, and donburi.  One of their most popular items on the menu is the mushroom chicken plate ($9) - boneless breaded fried chicken covered with a homemade mushroom cream sauce.  If you order this plate to-go, they'll put the mushroom sauce in a separate container, and if you use it sparingly when you eat your chicken, you can use the leftovers at home and make another meal with it. 

They have picnic benches to sit on and a little tent to keep you out of the sun, but it is hot so expect to sweat a little.   

They have a couple of parking spots in the lot, otherwise you have to find parking on the street, which is hard to come by.  They share this lot with another food truck.

Cho Dang - Waipahu

My middle son is very interested in food from various countries, and he recently wanted to eat Korean food, so we ended up at Cho Dang in Waipahu.

I'm not normally a Korean food eater, but after this visit, Korean food is now one of my faves.  The Mandoo and BBQ Chicken were my favorite dishes. 

The Green Onion Jun with Seafood (shrimp and squid) is one of the most popular dishes at Cho Dang.  I don't eat a lot of seafood, but I did try this dish, and it was pretty tasty.

The Garlic Chicken was good, but the garlic was a bit too over-powering for my taste.

I don't normally eat meat so I didn't try the Meat-jun, but my middle son DEVOURED it, eating more than half the plate himself!

The food was great, the prices were reasonable (they offer some all-day specials for less than $7), and the server was very friendly and helpful.

My son is already asking to go back to eat more Meat-jun!

Klout Perk: McDonald's Chicken McNuggets

Klout and McDonald's recently gave me a $5 Arch Card to spend towards an order of Chicken McNuggets.  I normally order hamburgers or cheeseburgers when I go to McDonald's, so this was a great opportunity to try something different.

I was quite impressed with the Chicken Mcnuggets.  The outside batter was crispy, and the inside contained tender white chicken meat.  I tried the McNuggets with McDonalds' new habanero ranch sauce.  If you like spicy sauces, you'll like the habanero ranch sauce.

You can order the Chicken McNuggets ala carte, or with a meal (e.g. Happy Meal, Extra Value Meal).

Try it on your next visit to McDonald's!

Halona Blowhole

Our family loves to "play tourist," and on a recent weekend we decided to check out the Halona Blowhole.

The blowhole, formed naturally by an old lava tube, can create beautiful displays of water gushing into the air for several feet once waves hit the rocks.

There were busloads of tourists trying to get a glimpse of the blowhole.  On this particular day the winds and waves were not very strong, thus any sprays through the blowhole were very minimal.

But the views were still gorgeous!

Nanding's Bakery

I've heard a lot about Nanding's Bakery's famous Spanish Rolls, and I finally got to try some from the Waipahu location!

It's no wonder everyone raves about the Spanish Rolls - they're sweet, buttery, and sooooo yummy!

My kids ended up getting the cookies (which were gigantic), but they ate some of the rolls later and they loved them too!

On this visit I only bought 6 Spanish Rolls.  Next time I'm definitely buying more!

Roy's Ko Olina

My husband and I never dine out on Valentine's Day, but since he happened to be off this past Valentine's Day, we, along with our youngest son, decided to indulge in a lovely lunch at Roy's Ko Olina.

The food was amazing, and so was the service!

The server recommended the Spring Rolls, which I thought was very tasty, especially with the accompanying Dragon Sauce.

My husband loved the Loco Moco, and my chicken sandwich was very tasty (and huge!).  I really liked the House Cured Bacon & Baked Beans side.

Keiki meals are a bit pricey ($12.95), but it includes an appetizer (which was more than enough to feed my son), an entrée, and the cutest little ice cream sandwich for dessert!

Because it was Valentine's Day, they were offering the Chocolate Souffle, which they normally serve only during dinner, so of course we had to order it!

It was such a sweet and delicious way to end our Valentine's Day lunch.
