Oatmeal Chocolate Chip Cookie Bars

I love making bar cookies, mostly because it takes less time to make than individual cookies.

Last week I made these Oatmeal Chocolate Chip Cookie Bars.  Oatmeal Chocolate Chip Cookies are my favorite kind of cookies, and I guess I could've used my favorite recipe to make these bars, but instead I found one that was slightly different, and had a layer of chocolate chips in the middle.

Oatmeal Chocolate Chip Cookie Bars

Ingredients:
  • 1 c butter, softened
  • 1 c firmly packed brown sugar
  • 1/2 c sugar
  • 2 eggs
  • 2 t vanilla extract
  • 1/2 t  salt
  • 1 t  baking soda
  • 1 t baking powder
  • 1 1/2 c flour
  • 2 c rolled oats
  • 2 c chocolate chips 
Directions:
  • Preheat oven to 350 degrees Fahrenheit. 
  • In a large bowl cream together the butter and sugars.  
  • Mix in eggs and vanilla.   
  • Stir in the salt, baking soda, baking powder, flour, oats, and 1 cup chocolate chips.
  • Spread 1/2 of the mixture into a prepared 9x13 pan. 
  • Sprinkle remaining cup of chocolate chips on top. 
  • Spread remaining cookie mixture on top of chocolate chips. 
  • Bake for 25 to 30 minutes or until golden brown.
