Easy to Make Miso Soup

Miso soup is one of my kids' favorite meals.  It's usually a side dish but I like to make a whole pot for my family.  It's super easy to make and it's perfect for those days you are feeling under the weather.  I usually make it for my kids when they aren't feeling well.

You will need:
8 cups water
1/3 cup Wakame - dried seaweed (optional)
1 1/2 tsp dashino-moto
1/4 cup miso paste
1 block tofu
 2 tbsp green onions (optional)
1 egg (optional)

Pour the water into a large pot and bring to a boil. Add the Wakame and let it simmer.  Next, add the dashino-moto and miso paste and mix well.  I added a raw egg (scrambled) to the boiling soup.  Cut the tofu into cubes and add to soup.  Last, add the chopped green onions (optional). I didn't add green onions this time because I didn't have any.  If you need more flavor, add another tablespoon or two of miso paste.

It's pretty simple and it hits the spot on those chilly nights, especially the ones we are having here in Hawaii lately.  Enjoy!
