Cranberry Cheesecake Bars Recipe



I first started making these Cranberry Cheesecake Bars just for the holidays, but I love cheesecake so much that I make it whenever the mood strikes.  

Cranberry Cheesecake Bars

Ingredients
  • 3/4 c plus 1 T firmly packed brown sugar, divided
  • 1 c butter, softened
  • 2 c all-purpose flour
  • 1 1/2 c old fashioned oats
  • 1 8 oz pkg cream cheese, softened
  • 1 can sweetened condensed milk
  • 1/4 cup lemon juice
  • 1 can whole cranberry sauce
  • 2 T cornstarch

Directions
  • In a large bowl, combine 3/4 c brown sugar, butter, flour, and oats until crumbly.  
  • Reserve 1 1/2 cups of the mixture and set aside.  Press remaining mixture onto bottom of prepared 9x13 pan and bake in a preheated 350°F oven for 15 minutes.
  • Meanwhile, in a small bowl, mix together cream cheese, sweetened condensed milk, and lemon juice until smooth. 
  • In a separate small bowl, combine cornstarch, cranberry sauce, and remaining 1 T brown sugar.  
  • Pour cream cheese mixture onto baked crust, followed by cranberry sauce mixture.
  • Top with reserved oat mixture.  
  • Bake 45 minutes longer.
  • Cool and cut into bars.
