Peanut Butter Oatmeal Chocolate Chip Cookies

I've been finding myself baking a new cookie each week lately, and this week's cookie was Peanut Butter Oatmeal Chocolate Chip Cookies.

These cookies have a nice touch of peanut butter, especially great for those who love that PB+Chocolate combo!

Peanut Butter Oatmeal Chocolate Chip Cookies

Ingredients:
  • 1 1/2 c flour 
  • 1 t baking powder
  • 1 t baking soda
  • 1 t salt
  • 1 c butter, softened
  • 1 c sugar
  • 1/2 c packed brown sugar
  • 2 large eggs
  • 1 c creamy peanut butter
  • 2 t pure vanilla extract
  • 2 c old-fashioned whole rolled oats
  • 2 c semi-sweet chocolate chips
Directions:
  • Mix the flour, baking powder, baking soda, and salt together in a medium bowl.
  • In a separate large bowl. mix together the butter and sugars until creamy. 
  • Add the eggs, peanut butter, and vanilla.  Mix until combined.  
  • Combine the dry ingredients with the wet ingredients. 
  • Stir in oats.
  • Stir in chocolate chips.
  • Chill in refrigerator for at least 30 minutes.  
  • Preheat oven to 350°F.
  • Scoop 2 teaspoonfuls of dough onto parchment-lined baking sheet and bake for approximately 13 minutes.  
  • Remove from oven and allow to cool on baking sheet for at least 5 minutes before transferring to a wire rack to cool.
