Recipe: Baked Shoyu Chicken




Shoyu chicken is a favorite local dish here in Hawaii. There are many variations on how to make this popular dish. This particular recipe is based off of my Alma mater's cafeteria's recipe, and whenever I make it, it takes me back to the good old days of school lunches with my childhood friends.

Here's what you'll need for approximately 1 1/2 pounds of bone-in chicken thighs:
  • fresh ginger, sliced diagonally
  • dash of Hawaiian salt (optional)
  • 1 1/2 cups shoyu
  • 1/4 cup packed brown sugar
  • dash of Chinese Five Spice
Combine the ingredients listed above and marinate the chicken thighs for 1-2 days. 



Preheat oven to 350 degrees. Place marinated chicken thighs on a baking pan lined with foil. Bake 45-60 minutes until chicken is golden brown (I baked these for 50 minutes).  

My picky eaters gave this chicken two thumbs up!
