The hotel's catering department has planned a most tasty menu to accompany the festivities, including chilled selections, hot entrees, accompaniments, and freshly-made desserts. Chilled salad selections include a balsamic glazed ham and green bean spinach salad, fresh tropical fruits with toasted macadamia nuts, lox and chives potato salad with sour cream, roasted squash salad with pesto pasta, carrots, sweet peas and dill salad. The hot entrees to be served include, seafood Newburg (fresh catch, shrimp, mussels and scallops) in a rich cream sauce with pearl onions and artichokes, peppered steak au poivre drizzled with a cognac demi-glaze accented with spinach and shallots, roasted chicken and asparagus in a zesty lemon-sun dried tomato sauce. Entrees will pair nicely with the evening's side dishes of wild rice pilaf, wild mushrooms and potatoes au gratin, medley of herbed green beans and garden vegetables, freshly baked baguettes, taro and sweet rolls. Cap off this feast with a selection of desserts including strawberry-guava shortcake, banana pudding, peach-mango cobbler, lemon meringue, carrot cake and assorted cakes and pies.
