Super Easy Mango Coconut Granita

Mango season means it's summer season, so one hot summer day I decided to make a super easy 2-ingredient Mango Coconut Granita.

All you need is coconut milk and mangoes!  I peeled and chopped 3 medium-sized mangoes, and blended them with a 13.5 oz can of coconut milk until the consistency was smooth.


I poured the mixture into a freezer-safe container, and after 2-3 hours I scraped the hardened concoction with a fork.  I repeated the scraping after another hour, ensuring that the entire container was full of fluffy crystals.

The Mango Coconut Granita was so yummy on its own, but with the addition of chopped mangoes or strawberries and shredded coconut, it became an even more delightful treat!

Super easy and refreshing for a hot summer's day!
