Vanilla-Chocolate Pound Cake Recipe

When I saw the Vanilla-Chocolate Pound Cake recipe in the Woman's Day August 2014 magazine, I knew it was the perfect recipe to try out the Moonstruck Dark Hot Cocoa Mix I received from Nadia.
Vanilla-Chocolate Pound Cake (credit Woman's Day):

Ingredients:
  • 3/4 c butter, softened
  • 2 1/4 c flour
  • 1 1/2 t baking powder
  • 1/2 t salt
  • 3/4 c sugar
  • 4 large eggs
  • 2 t vanilla extract
  • 3/4 c milk
  • 1/4 c hot cocoa mix
  • 1 T boiling water
Directions:
  • Heat oven to 325 degrees F. 
  • Spray a loaf pan with cooking/baking spray.  
  • In a medium bowl, combine the flour, baking powder, and salt.
  • In a separate bowl, beat the butter and sugar until light and fluffy. 
  • Beat in the eggs, one at a time, and then add the vanilla.
  • Alternately add the flour mixture and the milk - be careful not to over mix.
  • In a small bowl, combine the hot cocoa mix with the boiling water. 
  • Add 1/2 cup batter and mix to combine. 
  • Spoon 1/3 of the vanilla batter into the prepared pan and top with small spoonfuls of 1/3 of the chocolate batter. 
  • Repeat twice, ending with spoonfuls of chocolate. 
  • Use a butter knife to swirl the mixture.  
  • Bake for approximately 70 to 75 minutes. 
  • Let cool in the pan for 5 minutes before transferring to a wire rack.
