Banana Muffins with Cinnamon-Sugar Topping

I always try to bake a nut-free snack for my middle son to take to school, and most recently I made these Banana Muffins with Cinnamon-Sugar Topping (adapted from this recipe from Allrecipes.com).

They freeze well, so I plan to make a double batch next time!

Banana Muffins with Cinnamon-Sugar Topping (adapted from Allrecipes.com):

Ingredients:
  • 1 1/2 c flour
  • 1 t baking soda
  • 1 t baking powder
  • 1/2 t salt
  • 3 bananas, mashed
  • 3/4 c sugar 
  • 1 egg
  • 1/3 c butter, melted
  • 1/3 c packed brown sugar
  • 1/8 t cinnamon
Directions:
  • Preheat oven to 375 degrees F. 
  • Spray a mini muffin tin with baking/cooking spray.
  • In a bowl, combine 1 1/2 cups flour, baking soda, baking powder and salt. 
  • In another bowl, mix together the bananas, sugar, egg and melted butter. 
  • Combine the flour and banana mixtures until just moistened.  
  • Spoon batter into prepared muffin tin.
  • In a small bowl, mix together brown sugar and cinnamon. 
  • Sprinkle topping over muffins.
  • Bake in preheated oven for 10 to 12 minutes.
